Ingredients

  • 2/3 cup graham cracker crumbs
  • 2 tablespoons butter or margarine, melted
  • 1 (8 oz) package cream cheese, softened
  • 1 teaspoon vanilla extract
  • 1 egg
  • 1/3 cup sugar
  • 24 cherries from a can cherry pie filling

Instructions

  1. Preheat oven to 375°F. Grease two 1 3/4-inch tartlet or small cupcake pans.
  2. Combine graham cracker crumbs with melted butter and press a rounded teaspoonful into each cup.
  3. In a mixing bowl, beat softened cream cheese, vanilla extract, egg, and sugar until well blended.
  4. Fill each prepared tartlet with the cream cheese mixture.
  5. Bake for 10 minutes.
  6. Chill thoroughly before serving.
  7. When ready to serve, run a thin knife around each tart and lift out of the pan.
  8. Top each tart with a cherry from the can.
