Ingredients

  • 5 to 6 cups diced leftover turkey
  • 1/2 cup butter
  • 3 cups bread crumbs
  • 3/4 cup celery chopped
  • 1 onion chopped
  • 1 teaspoon salt
  • 1/4 teaspoon baking powder
  • 1/4 teaspoon pepper
  • 1/4 teaspoon poultry seasoning
  • 1 egg
  • 3/4 cup broth or milk
  • 1 (10 1/2 oz.) can cream of mushroom soup

Instructions

  1. Arrange diced leftover turkey in a large baking dish.
  2. Melt butter in a skillet and sauté bread crumbs, chopped celery, and chopped onion until golden.
  3. Add salt, baking powder, pepper, and poultry seasoning to the sautéed mixture.
  4. Beat the egg and combine it with broth or milk.
  5. Add the egg mixture to the bread crumbs and vegetable mixture, stirring well.
  6. Pour the mixture over the turkey in the baking dish.
  7. Spread the cream of mushroom soup evenly over the top.
  8. Sprinkle with additional buttered bread crumbs.
  9. Bake uncovered at 350°F (175°C) for 45 minutes to 1 hour until heated through and golden on top.
