Ingredients

  • 1 cup self-rising flour
  • 1/4 cup sugar
  • 1 teaspoon chili powder
  • 1 teaspoon baking powder
  • 1/4 cup chopped green pepper
  • 2 tablespoons diced pimento
  • 1 cup cornmeal
  • 2 eggs
  • 1/2 cup milk
  • 1 stick margarine or 1/2 cup applesauce

Instructions

  1. Sift together self-rising flour, sugar, chili powder, and baking powder.
  2. Stir in cornmeal.
  3. Add chopped green pepper and diced pimento.
  4. In a separate bowl, beat eggs and milk, then add margarine or applesauce.
  5. Combine wet and dry ingredients and stir until just mixed.
  6. Beat for 1 minute.
  7. Pour batter into a greased pan.
  8. Bake at 425°F for 20 minutes.
