Ingredients

  • 3 lb. potatoes
  • 2 onions, thinly sliced
  • 1/2 tsp. salt
  • water
  • 1/4 c. margarine
  • 3 Tbsp. flour
  • 2 c. milk
  • 3/4 tsp. salt
  • 1/4 tsp. pepper
  • 3/4 to 1 lb. Velveeta cheese

Instructions

  1. Peel and cut potatoes into 1/4-inch slices to make 8 cups.
  2. Combine potatoes, onions, and salt in a Dutch oven.
  3. Add water and boil until just done.
  4. Drain and set aside.
  5. Melt the margarine in a heavy saucepan over low heat.
  6. Add flour and cook for 1 minute.
  7. Gradually add milk and cook over medium heat, stirring constantly until thick.
  8. Add salt, pepper, chopped parsley, pimentos, and cheese.
  9. Spoon potatoes into a lightly greased baking dish.
  10. Pour sauce on top and heat in the oven at 350°F for 10 to 15 minutes.
