Ingredients

  • 1 cup ground suet
  • 1 cup molasses
  • 1 cup milk
  • 3 1/2 cups flour
  • 1 teaspoon salt
  • 1/4 teaspoon nutmeg
  • 2 teaspoons baking soda
  • 1 teaspoon cream of tartar
  • 1 teaspoon cinnamon
  • 3/4 teaspoon cloves
  • 1 cup raisins
  • 1/2 cup currants
  • 1/2 cup finely chopped citron

Instructions

  1. Combine ground suet, molasses, and milk in a mixing bowl.
  2. Sift the flour.
  3. Measure 1/4 cup of flour and reserve for dredging the fruits.
  4. Sift the remaining flour with salt, nutmeg, cinnamon, cloves, cream of tartar, and baking soda.
  5. Add the sifted dry ingredients to the suet mixture and stir well.
  6. Add the dredged raisins, currants, and citron to the mixture.
  7. Mix thoroughly until combined.
  8. Fill a well-oiled 1-pound pudding pan two-thirds full with the mixture.
  9. Cover the pan with a lid or foil.
  10. Steam the pudding for 3 hours.
  11. Serve hot with pudding sauce or your preferred accompaniment.
