Ingredients

  • 3 eggs
  • 1 cup salad oil
  • 2 cups sugar
  • 1 teaspoon vanilla
  • 1 cup chopped nuts
  • 2 cups grated zucchini
  • 3 cups flour
  • 1 teaspoon baking powder
  • 1 teaspoon baking soda
  • 1 teaspoon cinnamon
  • 1/2 teaspoon salt

Instructions

  1. Beat together the eggs, salad oil, sugar, and vanilla.
  2. Add chopped nuts and grated zucchini; mix until combined.
  3. In a separate bowl, combine flour, baking powder, baking soda, cinnamon, and salt.
  4. Gradually add the dry ingredients to the zucchini mixture, stirring gently.
  5. Pour batter into two pregreased and floured loaf pans.
  6. Bake at 350°F (175°C) for 1 hour or until a toothpick inserted into the center comes out clean.
