A fresh, tangy Texas salsa with diced tomatoes, Ro-Tel, cilantro, and spices, perfect for dipping chips or adding flavor to Tex-Mex dishes.

Ingredients

  • 1 large can diced tomatoes
  • 1 can Ro-Tel tomatoes
  • 1/4 cup chopped onion
  • 1 tablespoon cumin
  • 1/2 teaspoon salt
  • 1/2 teaspoon sugar
  • 1 1/2 tablespoons vinegar
  • 1/4 cup or more fresh cilantro
  • 2 garlic cloves or 1 teaspoon garlic powder

Instructions

  1. Put all ingredients into a blender.
  2. Pulse a few times until combined.
  3. Transfer the salsa to jars.
  4. Serve with your favorite chips.
