Ingredients

  • 18 small to medium tomatoes, peeled and chopped
  • 2 large onions, chopped
  • 1 cup mild assorted chile peppers, chopped
  • 3 jalapeno peppers, chopped
  • 2 garlic cloves, grated
  • 1 cup sugar
  • 1 cup apple cider vinegar
  • 1 teaspoon paprika
  • 1 teaspoon mace
  • 1 tablespoon salt

Instructions

  1. Blanch, peel, and chop the tomatoes.
  2. Chop the onions and assorted chile peppers.
  3. Chop the jalapeno peppers and grate the garlic cloves.
  4. Combine the chopped tomatoes, onions, chile peppers, jalapenos, and garlic in a pot.
  5. Add sugar, apple cider vinegar, paprika, mace, and salt to the mixture.
  6. Cook the mixture over medium heat until flavors meld and sauce thickens, about 30 minutes, stirring occasionally.
  7. Allow to cool before transferring to jars or containers for storage.
