Ingredients

  • 4 cups pinto beans
  • 1 pound salt pork or ham hocks
  • 2 medium onions, chopped
  • 2 tablespoons sugar
  • 3 teaspoons chili powder
  • 6 ounces tomato paste
  • salt to taste

Instructions

  1. Wash the pinto beans and soak them overnight; drain.
  2. Place the soaked beans in a large kettle or Dutch oven and cover with water.
  3. Add salt pork or ham hocks, chopped onions, sugar, chili powder, and tomato paste to the pot.
  4. Simmer uncovered for 3 to 4 hours, stirring occasionally.
  5. Add salt to taste and more water if needed.
  6. Continue cooking for another hour or until the beans are tender.
