Ingredients

  • 1 lb hamburger
  • 2 Tbsp onion, chopped
  • 2 Tbsp green pepper, chopped
  • 1/4 cup cornmeal
  • 1 tsp salt
  • 1 1/2 tsp dry mustard
  • 1 tsp chili powder
  • 1/2 cup milk
  • 1 egg, slightly beaten
  • 1/4 cup flour
  • 2 Tbsp fat
  • 2 cups tomato juice
  • 3 potatoes, quartered
  • 6 carrots, halved
  • 12 small onions

Instructions

  1. Combine hamburger, chopped onion, chopped green pepper, cornmeal, salt, dry mustard, chili powder, milk, and beaten egg. Mix thoroughly.
  2. Form the mixture into small meatballs.
  3. Sprinkle the meatballs with flour and brown them in hot fat.
  4. Place browned meatballs in a 4-quart casserole dish.
  5. In the skillet with fat, add tomato juice and cook until the mixture thickens.
  6. Pour the tomato mixture over the meatballs in the casserole.
  7. Arrange quartered potatoes, halved carrots, and small onions around the meatballs.
  8. Sprinkle the vegetables with salt, cover tightly, and bake in a 350°F oven for 1 hour.
