Ingredients

  • 1 slice bacon
  • 1/2 cup chopped onion
  • 1 medium carrot, cut into 1/4-inch slices
  • 1/4 teaspoon salt
  • 1/4 teaspoon pepper
  • 1/4 teaspoon thyme
  • 1 tablespoon tomato paste
  • 1/2 teaspoon minced garlic
  • 14-ounce can stewed tomatoes
  • 16-ounce can pinto beans, rinsed and drained
  • 2 tablespoons chopped fresh parsley
  • 2 teaspoons red wine vinegar

Instructions

  1. Cook bacon in a large skillet until crisp.
  2. Drain on paper towels and crumble the bacon.
  3. Pour off all but 1 tablespoon of drippings from the skillet.
  4. Add chopped onion, carrot slices, salt, pepper, and thyme to the skillet.
  5. Cook, stirring occasionally, over medium heat until the onion is tender, about 5 minutes.
  6. Stir in tomato paste and minced garlic; cook for 1 minute.
  7. Add stewed tomatoes, pinto beans, and crumbled bacon to the skillet.
  8. Stir to combine and simmer for 5 minutes.
