Ingredients

  • 1 3/4 cups water
  • 2 teaspoons salt
  • 1 package dry yeast
  • 4 to 4 1/2 cups sifted flour
  • 1/2 cup cornmeal
  • 1/2 cup molasses
  • 2 tablespoons butter
  • 1/2 cup warm water
  • 1 pound American cheese, cubed

Instructions

  1. In a 2-quart saucepan, combine water, cornmeal, and salt. Bring to a boil, stirring constantly.
  2. Cook until slightly thickened. Remove from heat.
  3. Stir in molasses and butter. Cool to lukewarm.
  4. Soften yeast in warm water in a large mixing bowl.
  5. Blend in the cornmeal mixture.
  6. Gradually add sifted flour to form stiff dough.
  7. Knead until smooth and satiny.
  8. Place in a greased bowl. Let rise until doubled.
  9. Grease two squares of foil and line two 8 or 9-inch round pans.
  10. Work cheese cubes into the dough 1/4 at a time, until evenly distributed.
  11. Divide dough and shape into loaves, covering the cheese cubes.
  12. Let rise until doubled.
  13. Bake at 350°F for 45 to 55 minutes.
