Ingredients

  • 1/2 (16 oz.) pkg. dry pinto beans (1 c.)
  • 2 Tbsp. salad oil
  • 3/4 lb. beef for stew, cut into 1-inch chunks
  • 1 large onion, diced
  • 2 large carrots, cut into 1-inch chunks
  • 2 medium sized celery stalks, cut into 1-inch chunks
  • 1 1/2 Tbsp. salt
  • 1/2 tsp. dried thyme leaves
  • 1/4 tsp. pepper

Instructions

  1. Rinse beans.
  2. Heat beans in 4 cups water to a boil; cool for 3 minutes.
  3. Remove from heat; cover and let stand 1 hour.
  4. Drain and rinse beans; set aside.
  5. Heat salad oil in a pot and brown beef chunks on all sides.
  6. Cook diced onion in the drippings until tender.
  7. Add browned meat, beans, carrots, celery, salt, thyme, pepper, and 3 cups water.
  8. Bring to a boil.
  9. Reduce heat, cover, and simmer for 1½ hours, stirring occasionally, until meat and beans are tender.
