Ingredients

  • 12 large eggs
  • 2 green onions with tops, finely chopped
  • 1/4 cup finely chopped sweet red pepper
  • 1/4 cup finely chopped dill pickle
  • 1/4 cup reduced calorie mayonnaise
  • 1 teaspoon curry powder
  • 1/4 teaspoon hot red pepper sauce
  • paprika (optional)
  • finely chopped parsley (optional)

Instructions

  1. Place eggs in a large saucepan and cover with cold water.
  2. Bring the water to a boil over high heat.
  3. Remove from heat and cover the saucepan.
  4. Let the eggs stand for 15 minutes.
  5. Cool the eggs under cold water and peel them.
  6. Slice the eggs in half lengthwise and remove the yolks.
  7. Refrigerate 6 of the yolks for another use.
  8. Arrange 18 egg yolk halves on a serving platter.
  9. Place the remaining 6 egg white halves and 18 yolk halves in a large bowl.
  10. Mash the eggs with a fork or pastry blender.
  11. Blend in the chopped green onions, red pepper, dill pickle, mayonnaise, curry powder, and hot red pepper sauce.
  12. Spoon or pipe the mixture into the egg white halves.
  13. Sprinkle with paprika and chopped parsley, if desired.
  14. Refrigerate for up to 6 hours before serving.
