Cider Chicken Casserole

Ingredients

  • 3 tsp. corn oil
  • 1/4 c. flour
  • 1 1/2 lb. skinned, boned chicken breasts
  • fresh ground pepper
  • 3 medium onions
  • 1 c. apple cider
  • 3 fresh tomatoes or 14 oz. canned tomatoes
  • 1 tbsp. fresh basil

Instructions

  1. Coat the chicken strips lightly with flour.
  2. Heat corn oil in a large pan and brown the chicken pieces a bit at a time.
  3. Remove the chicken and set aside.
  4. Saute sliced onions in the same pan, adding a little apple cider if needed to prevent sticking.
  5. Return the browned chicken to the pan.
  6. Add chopped or canned tomatoes and chopped fresh basil.
  7. Pour in apple cider to keep moist.
  8. Simmer the casserole until the chicken is cooked through and flavors meld.
