Chicken Breasts With Pecans Sausage Stuffing

Ingredients
- 1/3 lb ground pork sausage ⓘ
- 1/3 c butter ⓘ
- 1/3 c finely chopped celery ⓘ
- 1/2 c chopped pecans ⓘ
- 1/3 c finely chopped green peppers ⓘ
- 1 small onion chopped ⓘ
- 1/4 tsp pepper ⓘ
- 1/8 tsp salt ⓘ
- 3 c dry bread cubes ⓘ
- 1 large egg beaten ⓘ
- 1 1/2 Tbsp milk ⓘ
- 4 skinless chicken breasts ⓘ
- 1 1/2 Tbsp butter ⓘ
- 3 Tbsp fine dry bread crumbs ⓘ
Instructions
- Brown the sausage, crumbling it as it cooks.
- Melt 1/3 cup butter over low heat. Add chopped celery, green peppers, and onion, stirring constantly until vegetables are tender.
- Add 1/3 cup chopped pecans, pepper, and salt; cook for 3 minutes.
- Remove the mixture from heat.
- Stir in the cooked sausage, bread cubes, beaten egg, and milk; set aside.
- Place each chicken breast between two sheets of plastic wrap or wax paper.
- Flatten each chicken breast to 1/4-inch thickness using a meat mallet or rolling pin.
- Arrange the flattened chicken breasts on a flat surface.
- Spoon the sausage mixture into the center of each chicken breast.
- Combine 1 1/2 tablespoons melted butter, remaining pecans, and bread crumbs; pour this mixture over the stuffed chicken breasts.
- Bake at 350°F (175°C) for 30 minutes until cooked through and golden.
