Ingredients

  • 1/3 lb ground pork sausage
  • 1/3 c butter
  • 1/3 c finely chopped celery
  • 1/2 c chopped pecans
  • 1/3 c finely chopped green peppers
  • 1 small onion chopped
  • 1/4 tsp pepper
  • 1/8 tsp salt
  • 3 c dry bread cubes
  • 1 large egg beaten
  • 1 1/2 Tbsp milk
  • 4 skinless chicken breasts
  • 1 1/2 Tbsp butter
  • 3 Tbsp fine dry bread crumbs

Instructions

  1. Brown the sausage, crumbling it as it cooks.
  2. Melt 1/3 cup butter over low heat. Add chopped celery, green peppers, and onion, stirring constantly until vegetables are tender.
  3. Add 1/3 cup chopped pecans, pepper, and salt; cook for 3 minutes.
  4. Remove the mixture from heat.
  5. Stir in the cooked sausage, bread cubes, beaten egg, and milk; set aside.
  6. Place each chicken breast between two sheets of plastic wrap or wax paper.
  7. Flatten each chicken breast to 1/4-inch thickness using a meat mallet or rolling pin.
  8. Arrange the flattened chicken breasts on a flat surface.
  9. Spoon the sausage mixture into the center of each chicken breast.
  10. Combine 1 1/2 tablespoons melted butter, remaining pecans, and bread crumbs; pour this mixture over the stuffed chicken breasts.
  11. Bake at 350°F (175°C) for 30 minutes until cooked through and golden.
