Ingredients

  • 2 lb. lean ground beef
  • 2 c. chopped onion
  • 2 Tbsp. cooking oil
  • 1 (1.25 oz.) pkg. taco mix
  • 1 (.4 oz.) original Ranch dressing mix
  • 4 (16 oz.) cans diced tomatoes
  • 1 (16 oz.) can pinto beans, undrained
  • 1 (16 oz.) can kidney beans, undrained
  • 1 (16 oz.) can whole kernel corn, drained
  • 1 (4 oz.) can green chilies, drained and chopped
  • 1/2 tsp. salt

Instructions

  1. Sauté onions in oil until translucent.
  2. Add ground beef and cook until browned.
  3. Stir in taco mix and Ranch dressing mix.
  4. Add diced tomatoes, pinto beans, kidney beans, drained corn, chopped green chilies, and salt.
  5. Bring the mixture to a boil, then reduce heat and simmer for 2 hours, stirring occasionally.
  6. Serve hot with nacho chips, grated cheese, and sour cream.
