  • 1 tsp. ground cinnamon
  • 4 Tbsp. margarine
  • 1/2 c. chicken broth

  2. Add chicken and sauté for 20 minutes or until tender and golden all over.
  3. Remove chicken and drain on paper towels.
  4. Keep chicken warm.
  5. Pour off fat from the pan.
  6. Add chicken broth and finely grated rind and juice of 1 orange to the pan.
  7. Bring to a boil, whisking constantly.
  8. Arrange chicken on a serving platter.
  9. Pour sauce over the chicken.
  10. Peel the remaining orange, removing skin and pith, and slice thinly.
  11. Arrange orange slices on top of the chicken and serve with rice.
