Ingredients

  • 1 1/2 cups all-purpose flour
  • 1 tablespoon baking powder
  • 1/4 cup shortening
  • 1 large egg
  • 1/2 cup firmly packed brown sugar
  • 2 tablespoons all-purpose flour
  • 2 teaspoons ground cinnamon
  • 1/2 cup raisins or chopped nuts
  • 2 tablespoons oleo (melted margarine or butter)
  • 3/4 cup sugar
  • 1/2 teaspoon salt
  • 1/2 cup milk

Instructions

  1. Combine 1 1/2 cups flour, sugar, baking powder, and salt in a mixing bowl.
  2. Cut in shortening with a pastry blender until the mixture is crumbly.
  3. In a separate bowl, combine egg, milk, and vanilla.
  4. Add the egg mixture to the flour mixture, stirring until just blended. Set the batter aside.
  5. In another bowl, combine brown sugar, 2 tablespoons flour, cinnamon, and raisins or nuts.
  6. Stir in melted oleo (margarine or butter) into the brown sugar mixture.
  7. Pour the batter into a greased baking pan.
  8. Sprinkle the cinnamon-raisin mixture over the batter.
  9. Bake at 350°F (175°C) for about 30 minutes or until a toothpick inserted in the center comes out clean.
