Ingredients

  • 1 can red beans
  • 1 can mixed vegetables
  • 1 (8 oz.) pkg. Skroodle noodles
  • 1 small jar pimentos
  • 1 c. chopped onions
  • 1/2 c. chopped celery
  • 1 1/2 tsp. celery seed
  • 1 1/2 tsp. salt
  • 1 Tbsp. margarine
  • 1 1/2 c. sugar
  • 1 c. vinegar
  • 3 Tbsp. flour
  • 3 tsp. dry mustard

Instructions

  1. Cook Skroodle noodles according to package instructions and drain.
  2. In a large bowl, combine red beans, mixed vegetables (drained), pimentos, celery, and onions.
  3. In a saucepan, cook celery seed, salt, margarine, sugar, vinegar, flour, and dry mustard until bubbly and thickened.
  4. Pour the dressing over the noodle mixture and stir to combine.
  5. Let stand overnight in the refrigerator before serving.
