Citrus Soufflé

Ingredients

  • 2 1/2 tbsp butter
  • 1/3 cup granulated sugar
  • 1 None lime, zested
  • 1/2 None lemon, zested
  • 2 tbsp all-purpose flour
  • 1 tbsp orange juice
  • 1 cup milk
  • 2 None eggs, separated + 2 egg whites
  • None None powdered sugar, for dusting
  • None None mixed citrus zest strips, to decorate

Instructions

  1. Preheat oven to 375°F. Lightly grease 4 - 8.5 oz ramekins.
  2. Cream butter, sugar and citrus zest until light and fluffy. Add flour and orange juice. Scald milk then whisk in. Transfer mixture to a saucepan and heat until thickened. Beat in yolks then allow to cool slightly. (Can be prepared to this stage and set aside.)
  3. When ready to serve, whip egg whites to soft peaks. Fold into citrus mixture then transfer to prepared dishes. Bake for 15-20 mins, until puffed and golden. Dust with powdered sugar and top with citrus zest. Serve immediately.
