Ingredients

  • 18 good size clams
  • 3 garlic cloves
  • 10 fresh parsley sprigs
  • 1/4 cup olive oil
  • 1/4 cup butter
  • pinch of red pepper
  • pinch of black pepper
  • 2 good size tomatoes
  • 1 tablespoon tomato paste
  • pinch of flour

Instructions

  1. Chop garlic and parsley together.
  2. Combine olive oil and butter in a skillet and heat.
  3. Add clams, garlic, parsley, red and black pepper; stir.
  4. If using canned clams, add salt.
  5. Cook for 5 minutes.
  6. Start boiling spaghetti water.
  7. Add chopped tomatoes, tomato paste, 2 tablespoons clam juice, and a pinch of flour to the skillet.
  8. Simmer and cook for 20 minutes.
