Ingredients

  • 1 1/2 cups unbleached all purpose flour
  • 3/4 teaspoon salt
  • 1/2 cup cold unsalted or vegetable shortening
  • 3 to 5 tablespoons ice water

Instructions

  1. In a large bowl, combine flour and salt.
  2. Cut or rub in half of the butter or shortening, then the other half.
  3. Sprinkle the ice water, one tablespoon at a time, over the mixture.
  4. With a fork, toss the mixture together.
  5. Continue until the dough is just moist enough to hold together when pressed.
  6. Gather the dough into a ball, wrap in plastic wrap, and chill for at least one hour.
  7. Take the dough from the refrigerator and roll out on a lightly floured surface until about 1/8 inch thick and about 2 inches larger in diameter than your pie plate.
  8. This provides enough to make a high rim for a single crust shell.
  9. Keep the dough chilled until ready to use.
  10. The dough can be chilled for up to a month or frozen until needed.
