Ingredients

  • 4 chicken breasts, boned and boiled for 20 minutes
  • 2 pkg. frozen broccoli
  • 6 slices American cheese
  • 1 can cream of chicken soup
  • 3/4 cup mayonnaise
  • 1/3 cup milk
  • 1 teaspoon lemon juice
  • 1/4 teaspoon curry powder
  • 1/2 cup Ritz crackers, broken up

Instructions

  1. Cook the broccoli until tender.
  2. Place the cooked broccoli in the bottom of a casserole dish.
  3. Arrange the boiled chicken breasts on top of the broccoli, then cover with American cheese slices.
  4. In a bowl, mix the cream of chicken soup, mayonnaise, milk, lemon juice, and curry powder.
  5. Pour the mixture over the chicken and broccoli in the casserole dish.
  6. Sprinkle broken Ritz crackers evenly over the top.
  7. Bake in a preheated oven at 350°F for 30 minutes until bubbly and golden.
