Ingredients

  • 7 lb. sliced cucumbers
  • 2 gal. water
  • 2 c. hydrated lime
  • 4 1/2 lb. sugar
  • 1 1/2 qt. vinegar
  • 1 tsp. mustard seed
  • 1 tsp. celery seed

Instructions

  1. Soak sliced cucumbers in water and lime for 24 hours.
  2. Rinse in cold water and drain.
  3. Let stand in cold water for 3 hours and drain off.
  4. Pour a syrup made of sugar, vinegar, mustard seed, celery seed, and salt over the cucumbers and let stand overnight.
  5. Put the mixture on the stove and cook for 30 minutes.
  6. Seal while hot.
