Cocoa Souffle

- Preheat oven to 350°F (175°C).
- Spray a 6-cup souffle dish with nonstick vegetable oil cooking spray.
- Lightly dust the souffle dish with confectioners sugar.
- In a saucepan, combine granulated sugar, cocoa powder, cornstarch, and salt.
- Gradually whisk in the milk and evaporated skim milk over medium heat until smooth.
- Cook, stirring constantly, until the mixture thickens and begins to boil.
- Remove from heat and stir in orange flavor liqueur and vanilla.
- In a small bowl, whisk the egg yolk and then mix it into the cocoa mixture.
- In a separate bowl, beat egg whites and cream of tartar until stiff peaks form.
- Gradually fold the egg whites into the cocoa mixture, taking care not to deflate the mixture.
- Pour the batter into the prepared souffle dish.
- Bake in the preheated oven for about 20 minutes or until risen and set.
- Serve immediately.
