Ingredients

  • 2 Tbsp. granulated sugar
  • 2 Tbsp. unsweetened cocoa powder
  • 1 Tbsp. cornstarch
  • 1/8 tsp. salt
  • 1/2 c. low-fat 1% milk
  • 1/4 c. evaporated skim milk
  • 1 Tbsp. orange flavor liqueur
  • 1 tsp. vanilla
  • 1 egg yolk
  • 5 egg whites
  • 1/4 tsp. cream of tartar
  • 1/4 c. confectioners sugar

Instructions

  1. Preheat oven to 350°F (175°C).
  2. Spray a 6-cup souffle dish with nonstick vegetable oil cooking spray.
  3. Lightly dust the souffle dish with confectioners sugar.
  4. In a saucepan, combine granulated sugar, cocoa powder, cornstarch, and salt.
  5. Gradually whisk in the milk and evaporated skim milk over medium heat until smooth.
  6. Cook, stirring constantly, until the mixture thickens and begins to boil.
  7. Remove from heat and stir in orange flavor liqueur and vanilla.
  8. In a small bowl, whisk the egg yolk and then mix it into the cocoa mixture.
  9. In a separate bowl, beat egg whites and cream of tartar until stiff peaks form.
  10. Gradually fold the egg whites into the cocoa mixture, taking care not to deflate the mixture.
  11. Pour the batter into the prepared souffle dish.
  12. Bake in the preheated oven for about 20 minutes or until risen and set.
  13. Serve immediately.
