Ingredients

  • 2 tsp. powdered ginger
  • 12 oz. plain flour
  • 2 oz. mixed candied peel
  • 2 oz. dark brown sugar
  • 4 oz. butter
  • 8 oz. molasses
  • 1/2 tsp. bicarbonate of soda
  • 4 Tbsp. warm milk
  • 2 eggs

Instructions

  1. Sift the powdered ginger with the plain flour; add the mixed candied peel and mix well.
  2. Heat the dark brown sugar, butter, and molasses over low heat until the sugar dissolves completely.
  3. Dissolve the bicarbonate of soda in the warm milk.
  4. Beat the eggs well and add them to the milk mixture, then beat a little more.
  5. Add the molasses mixture and the egg mixture to the flour mixture, and mix thoroughly until well combined.
