Ingredients

  • 3 lb. boneless chuck roast
  • 3 Tbsp. oil
  • 3 Tbsp. flour
  • 1 c. buttermilk
  • 1 c. water
  • 4 beef bouillon cubes
  • salt and pepper
  • 4 medium carrots
  • 2 medium onions
  • 10 oz. package frozen broccoli

Instructions

  1. Preheat oven to 350°F (175°C).
  2. In a large skillet, brown the boneless chuck roast in oil on all sides.
  3. Place the browned roast in a roaster or baking dish.
  4. Add flour to the drippings in the skillet and cook, stirring, for 1-2 minutes.
  5. Pour in buttermilk, water, and add beef bouillon cubes, stirring until the bouillon dissolves, about 10 minutes.
  6. Pour the sauce over the meat in the roaster.
  7. Arrange the carrots and onions around the meat.
  8. Cover and cook in the oven for 1 hour and 45 minutes.
  9. Add the thawed broccoli and cook uncovered for an additional 15 minutes.
