Ingredients

  • 1 1/2 cups cut dates
  • 3/4 cup water
  • 1/4 cup sugar
  • 1 tablespoon lemon juice
  • 2 cups flour
  • 1/2 teaspoon salt
  • 3/4 cup brown sugar
  • 3/4 cup butter
  • 1 cup coconut
  • 1/2 cup chopped nuts

Instructions

  1. Combine the cut dates, water, and sugar in a saucepan.
  2. Bring to a boil, then simmer, stirring constantly, until the mixture thickens.
  3. Remove from heat and stir in lemon juice.
  4. Sift together flour and salt; stir in brown sugar.
  5. Cut in butter until the mixture resembles coarse crumbs.
  6. Stir in coconut and chopped nuts.
  7. Press half of the crumb mixture into the bottom of a greased 13 x 9-inch pan.
  8. Spread the date filling over the crust.
  9. Sprinkle the remaining crumb mixture on top and press down lightly.
  10. Bake at 350°F (175°C) for 30 to 35 minutes.
  11. Cool before cutting into bars.
