Ingredients

  • 2 cups flour
  • 2 teaspoons baking powder
  • 1/2 teaspoon salt
  • 2/3 cup butter or shortening
  • 1 cup sugar
  • 3 eggs
  • 1/3 cup milk
  • 1 teaspoon vanilla

Instructions

  1. Sift the flour once.
  2. Measure, add baking powder and salt, and sift together three times.
  3. Cream the butter thoroughly.
  4. Add sugar gradually and cream together until light and fluffy.
  5. Add eggs, one at a time, beating very thoroughly after each addition.
  6. Add flour, alternately with milk, a small amount at a time, beating well after each addition.
  7. Add vanilla.
  8. Bake in two greased 9-inch layer pans in a moderate oven (375°F) for 25 to 30 minutes.
  9. Spread frosting between layers and on top and sides of the cake.
  10. Use coconut frosting.
