Ingredients

  • 1 3/4 cups flour
  • 2/3 cup milk
  • 3/4 teaspoon salt
  • 2 1/4 teaspoons baking powder
  • 1 cup + 2 tablespoons sugar
  • 2 eggs
  • 1 teaspoon vanilla
  • 2/3 cup coconut

Instructions

  1. Sift all dry ingredients together: flour, salt, baking powder, and sugar.
  2. Cream butter and sugar until light and fluffy.
  3. Add eggs one at a time, beating well after each addition.
  4. Alternately add dry ingredients and milk to the creamed mixture, beginning and ending with dry ingredients.
  5. Stir in vanilla extract and coconut.
  6. Pour batter into two greased and floured cake pans.
  7. Bake at 350°F (175°C) for about 35 minutes or until a toothpick inserted into the center comes out clean.
  8. Cool in pans for 10 minutes, then turn out onto wire racks to cool completely.
