- Sift all dry ingredients together: flour, salt, baking powder, and sugar.
- Cream butter and sugar until light and fluffy.
- Add eggs one at a time, beating well after each addition.
- Alternately add dry ingredients and milk to the creamed mixture, beginning and ending with dry ingredients.
- Stir in vanilla extract and coconut.
- Pour batter into two greased and floured cake pans.
- Bake at 350°F (175°C) for about 35 minutes or until a toothpick inserted into the center comes out clean.
- Cool in pans for 10 minutes, then turn out onto wire racks to cool completely.
