- Sift flour, baking powder, baking soda, and salt; set aside.
- In a large mixer bowl, cream the butter.
- Add sugars and beat until light and fluffy.
- Blend in egg and vanilla.
- Mix in dry ingredients, then oats, chopped apple, and 1 1/3 cups of coconut.
- Combine the mixture well.
- Drop by 1/4 cup portions onto ungreased cookie sheets and flatten slightly.
- Sprinkle with additional coconut.
- Bake at 375°F for 15 minutes or until golden.
- Cool for 2 minutes on the sheet, then transfer to a wire rack.
- Alternatively, press dough into a greased 9 x 13-inch pan.
- Bake for 25 to 30 minutes.
- Cool and cut into squares.
