Ingredients

  • 1 cup flour
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1/2 teaspoon baking soda
  • 1/2 cup butter
  • 1/2 cup sugar
  • 1/2 cup packed brown sugar
  • 1 egg
  • 1 teaspoon vanilla
  • 1/2 cup quick rolled oats
  • 1/2 cup finely chopped apple
  • 2 cups ground coconut

Instructions

  1. Sift flour, baking powder, baking soda, and salt; set aside.
  2. In a large mixer bowl, cream the butter.
  3. Add sugars and beat until light and fluffy.
  4. Blend in egg and vanilla.
  5. Mix in dry ingredients, then oats, chopped apple, and 1 1/3 cups of coconut.
  6. Combine the mixture well.
  7. Drop by 1/4 cup portions onto ungreased cookie sheets and flatten slightly.
  8. Sprinkle with additional coconut.
  9. Bake at 375°F for 15 minutes or until golden.
  10. Cool for 2 minutes on the sheet, then transfer to a wire rack.
  11. Alternatively, press dough into a greased 9 x 13-inch pan.
  12. Bake for 25 to 30 minutes.
  13. Cool and cut into squares.
