Ingredients

  • 2 eggs
  • 1 1/2 cups flour
  • 1/2 cup dark rum
  • 1/4 cup milk
  • 1 tablespoon baking powder
  • 1/4 teaspoon ground cloves
  • 1/4 teaspoon ground allspice
  • 1/4 teaspoon black pepper
  • 2 cups shredded coconut
  • 16 medium-sized shrimp, peeled and deveined
  • vegetable oil for frying

Instructions

  1. In a medium-sized bowl, mix eggs, 1 cup of flour, rum, milk, baking powder, ground cloves, ground allspice, and black pepper.
  2. Place the remaining flour in a small bowl.
  3. Spread shredded coconut on a small plate.
  4. Dredge each shrimp in the flour, then dip it into the batter, and finally coat it in the shredded coconut.
  5. Place the coated shrimp on waxed paper.
  6. Carefully drop the coated shrimp into hot vegetable oil and fry for 3 to 5 minutes until golden brown.
  7. Drain the fried shrimp on paper towels and serve hot.
