Ingredients

  • 4 cod fillets
  • 1 medium onion
  • 1 medium tomato
  • 1 medium green pepper
  • 3 Tbsp butter

Instructions

  1. Bake the cod fillets in a sheet pan for 12 minutes at 375°F.
  2. While the cod is baking, slice the onion, green pepper, and tomato into circles.
  3. Melt the butter in a frying pan and sauté the onion and green pepper until done.
  4. Add the tomato to the pan and cook for 3 minutes, continuing to sauté.
  5. Remove the baked cod from the oven and top with the sautéed onion, green pepper, and tomato mixture.
