Ingredients

  • 1 lb. medium shrimp
  • 1/2 c. mayonnaise
  • 1 Tbsp. lemon juice
  • 1/4 tsp. grated orange rind
  • 2 tsp. sugar
  • 1 c. diced celery
  • 2 medium avocados
  • 1 c. Mandarin oranges
  • 1/4 c. diced green onions
  • 1/2 c. coconut

Instructions

  1. Mix mayonnaise, lemon juice, grated orange rind, and sugar to make the dressing.
  2. Combine the dressing with shrimp, diced celery, Mandarin oranges, and diced green onions.
  3. Cut avocados in half and remove pits, then fill them with the seafood mixture.
  4. Sprinkle shredded coconut on top of the filled avocados.
  5. Serve as an entree or salad with seafood dinner such as fish or shrimp.
