Ingredients

  • 1/4 cup margarine
  • 1 cup sugar
  • 2 eggs
  • 8 oz. sour cream
  • 3/4 teaspoon baking soda
  • 1 1/2 cups all-purpose flour
  • 1 1/2 teaspoons baking powder
  • 1 teaspoon vanilla
  • 1 cup chopped pecans
  • 1 tablespoon cinnamon

Instructions

  1. Cream margarine in a large mixing bowl.
  2. Gradually add 1 cup sugar, beating well.
  3. Add eggs one at a time, beating after each addition.
  4. Combine sour cream and baking soda.
  5. Add sour cream mixture to creamed margarine and sugar, beating well.
  6. In a separate bowl, combine all-purpose flour, baking powder, and salt.
  7. Gradually add flour mixture and vanilla to creamed mixture, beating well after each addition.
  8. In a small bowl, combine 1/4 cup sugar, chopped pecans, and cinnamon to make topping.
  9. Pour batter into a greased baking dish.
  10. Sprinkle pecan-cinnamon mixture evenly over the batter.
  11. Bake at 350°F (175°C) for about 30 minutes or until a toothpick inserted in the center comes out clean.
  12. Allow to cool slightly before cutting into squares and serving.
