Ingredients

  • 4 cups pared, diced apples
  • 1 cup pecan pieces
  • 3 cups flour
  • 2 cups sugar
  • 2 teaspoons baking powder
  • 1/4 teaspoon salt
  • 1/4 teaspoon allspice
  • 1/4 teaspoon nutmeg
  • 3/4 teaspoon cinnamon
  • 1 cup butter, melted
  • 2 teaspoons vanilla
  • 2 eggs, beaten

Instructions

  1. Grease and flour 2 (1 pound) coffee cans.
  2. In a medium bowl, mix together diced apples, pecan pieces, and sugar.
  3. Let the apple mixture stand for 1 hour, stirring frequently.
  4. Preheat oven and prepare batter by combining flour, baking powder, salt, allspice, nutmeg, and cinnamon.
  5. Add melted butter, vanilla, and beaten eggs to the dry ingredients and mix well.
  6. Fold in the apple and pecan mixture into the batter.
  7. Pour the batter into the prepared coffee cans.
  8. Bake at 350°F (175°C) until a toothpick inserted in the center comes out clean, approximately 60-75 minutes.
  9. Cool slightly before removing from cans and serving.
