Ingredients

  • 1 pkg yeast
  • 1/2 cup warm water
  • 1/8 teaspoon ginger
  • 3 tablespoons sugar
  • 1 can evaporated milk
  • 1 teaspoon salt
  • 2 tablespoons oil
  • 4 to 4 1/2 cups flour

Instructions

  1. Dissolve yeast in warm water containing the ginger and 1 tablespoon sugar.
  2. Let the mixture sit for 15 minutes to activate the yeast.
  3. Add the remaining sugar, evaporated milk, salt, oil, and flour to the yeast mixture and mix well.
  4. Pour the batter into two well-greased 1-pound coffee cans or one 2-pound coffee can.
  5. Bake at 350°F (175°C) for 45 minutes if using two 1-pound cans, or 60 minutes if using one 2-pound can.
  6. Remove from oven and let cool slightly before removing from cans.
