Coffee Cloud Sponge Cake

Ingredients

  • 1 Tbsp. instant coffee
  • 1 c. boiling water
  • 2 c. flour
  • 3 tsp. baking powder
  • 1/2 tsp. salt
  • 6 egg whites
  • 1/2 tsp. cream of tartar
  • 1/2 c. sugar
  • 6 egg yolks
  • 1 1/2 c. sugar

Instructions

  1. Dissolve the instant coffee in boiling water and let it cool.
  2. Sift together the flour, baking powder, and salt.
  3. Beat the egg whites with the cream of tartar until soft peaks form.
  4. Gradually add 1/2 cup of sugar to the egg whites, about 2 tablespoons at a time, and continue beating until stiff peaks form.
  5. In a separate bowl, beat the egg yolks with 1 1/2 cups of sugar until thick and pale.
  6. Mix the cooled coffee into the egg yolk mixture.
  7. Gently fold the dry ingredients into the egg yolk mixture.
  8. Carefully fold the beaten egg whites into the batter, maintaining the airiness.
  9. Pour the batter into a prepared cake pan and bake at 350°F (175°C) until a toothpick inserted in the center comes out clean.
  10. Allow the cake to cool before removing from the pan and serving.
