Coffee Cloud Sponge Cake

- Dissolve the instant coffee in boiling water and let it cool.
- Sift together the flour, baking powder, and salt.
- Beat the egg whites with the cream of tartar until soft peaks form.
- Gradually add 1/2 cup of sugar to the egg whites, about 2 tablespoons at a time, and continue beating until stiff peaks form.
- In a separate bowl, beat the egg yolks with 1 1/2 cups of sugar until thick and pale.
- Mix the cooled coffee into the egg yolk mixture.
- Gently fold the dry ingredients into the egg yolk mixture.
- Carefully fold the beaten egg whites into the batter, maintaining the airiness.
- Pour the batter into a prepared cake pan and bake at 350°F (175°C) until a toothpick inserted in the center comes out clean.
- Allow the cake to cool before removing from the pan and serving.
