Ingredients

  • 1 c. whipped cream
  • 1/4 c. sugar
  • 1 Tbsp. instant coffee
  • 1 tsp. vanilla
  • few drops almond extract
  • 2 egg whites
  • 2 Tbsp. sugar

Instructions

  1. Whip the cream until soft peaks form.
  2. Fold in 1/4 cup sugar, instant coffee, vanilla, and a few drops of almond extract.
  3. Beat egg whites until soft peaks form, then gradually add 2 tablespoons of sugar and beat to stiff peaks.
  4. Mix nuts and coconut.
  5. Fold the egg whites into the whipped cream mixture.
  6. Spoon the mixture into a metal ice cube tray.
  7. Top with nuts and coconut.
  8. Cover and freeze until firm.
