Ingredients

  • 4 oz. margarine
  • 4 oz. castor sugar
  • 3 eggs
  • 6 oz. plain flour
  • pinch of salt
  • 3/4 tsp. baking soda
  • 3 oz. shelled walnuts
  • 1 Tbsp. strong coffee

Instructions

  1. Cream the margarine and castor sugar together until light and fluffy.
  2. Add the eggs one at a time, beating well after each addition.
  3. Sift the plain flour, salt, and baking soda together and fold into the mixture.
  4. Gently fold in the strong coffee and chopped walnuts until just combined.
  5. Pour the batter into a greased cake tin and bake in a preheated oven at 180°C (350°F) for about 30 minutes, or until a skewer inserted in the center comes out clean.
