Ingredients

  • 3 oz. Black Cherry Jello
  • 20 oz. Can Crushed Pineapple
  • 20 oz. Can Pitted Black Cherries
  • 20 oz. Can Coca-Cola
  • 1 Cup Pecans, Chopped in Large Pieces
  • 4 oz. Cream Cheese
  • 3/4 Cup Powdered Sugar

Instructions

  1. Drain the black cherries and crushed pineapple, reserving the juice.
  2. Measure 2 cups of the fruit juice and heat to boiling in a saucepan.
  3. Dissolve the black cherry Jello into the boiling juice.
  4. Combine the remaining juice with Coca-Cola to make 2 cups total.
  5. Pour the Coca-Cola mixture into the Jello and stir well.
  6. Allow the mixture to cool until it becomes syrupy.
  7. Once the gelatin has begun to set, cut the pitted black cherries into pieces and add to the gelatin.
  8. Stir in the drained fruit and chopped pecans.
  9. Mix the softened cream cheese with powdered sugar until smooth.
  10. Fold the cream cheese mixture into whipped Cool Whip.
  11. Spread the creamy mixture over the set gelatin and refrigerate until firm.
