Cold Marinated Grape Tomatoes
Ingredients
- 8 cups Assorted Grape Tomatoes (Red, Orange, Yellow), Rinsed Well, Cut In Half
- 2 whole Shallots Minced Or Grated Finely ⓘ
- 3/4 cups Extra Virgin Olive Oil
- 1/4 cups White Wine Vinegar ⓘ
- 3 sprigs Fresh Thyme Chopped Finely ⓘ
- 2 Tablespoons Fresh Basil, Chopped Finely ⓘ
- 2 Tablespoons Kosher Or Sea Salt ⓘ
- 1 Tablespoon Black Pepper ⓘ
- 2 pinches Red Pepper Flakes ⓘ
Instructions
- In a large mixing bowl add the grape tomato halves, shallots, oil, vinegar, thyme, basil, salt, pepper and red pepper flakes. Stir well. Cover with plastic wrap and refrigerate overnight.
- I use this condiment in salads, with pastas, fish and chicken main courses. It is just delicious! Enjoy!
