Cold Salmon

A refreshing cold salmon dish featuring tender poached salmon, fresh vegetables, hard-boiled eggs, and a creamy mayonnaise garnish, perfect for light summer meals or entertaining.

Ingredients

  • 2 lb salmon
  • 4 hard-boiled eggs
  • 4 tomatoes
  • 1 cup cleaned shrimp
  • 2 heads lettuce
  • 1 cucumber
  • 1 bunch parsley
  • mayonnaise

Instructions

  1. Boil the salmon; carefully skin and debone it.
  2. Allow the salmon to cool in the stock.
  3. Arrange on a round platter over a bed of crisp lettuce leaves and sliced cucumbers.
  4. Garnish with sliced hard-boiled eggs, tomatoes, and parsley.
  5. Add mayonnaise on top; sprinkle with fresh dill and shrimp.
  6. Serve with extra mayonnaise on the side.
