Ingredients

  • 8 tomatoes
  • 3 medium zucchini
  • 3 stalks celery
  • 1 green pepper
  • 1 large onion
  • 2 Tbsp. lemon juice
  • 1/2 tsp. dried basil
  • 1/2 tsp. dried cumin
  • 1/2 tsp. grated lemon rind

Instructions

  1. In a food processor, combine tomatoes, green pepper, zucchini, celery, onion, lemon juice, basil, and cumin.
  2. Process with on/off turns until smooth.
  3. Serve chilled.
