Ingredients

  • 3/4 cup margarine
  • 2 cups sugar
  • 1 (16 oz.) can pumpkin
  • 4 eggs
  • 2 cups flour
  • 2 teaspoons baking powder
  • 1 teaspoon cinnamon
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1/4 teaspoon nutmeg
  • Vanilla frosting

Instructions

  1. Preheat oven to 350°F (175°C).
  2. Cream margarine and sugar until light and fluffy.
  3. Blend in pumpkin and eggs.
  4. Combine dry ingredients: flour, baking powder, cinnamon, baking soda, salt, and nutmeg.
  5. Add dry ingredients to the pumpkin mixture and mix well.
  6. Spread the batter into a greased and floured 15 1/2 x 10 1/2-inch jelly roll pan.
  7. Bake for 30 to 35 minutes until a toothpick inserted in the center comes out clean.
  8. Allow the bars to cool completely, then frost with vanilla frosting.
