Ingredients

  • 16 oz. frozen whole kernel corn, thawed
  • 1 small sweet onion, chopped
  • 1 large tomato, seeded and chopped
  • 1 large green pepper, chopped
  • 1/4 cup mayonnaise
  • 1/2 tsp. salt
  • 1/2 tsp. coarsely ground pepper
  • 1/4 cup cucumber, seeded and chopped (optional)

Instructions

  1. Stir together the thawed corn, chopped onion, chopped tomato, chopped green pepper, mayonnaise, salt, and pepper in a bowl until thoroughly mixed.
  2. Cover and chill the salad for 2 hours to allow flavors to meld.
  3. Serve the salad with a slotted spoon, topping each serving with chopped cucumber if desired.
