Ingredients

  • 3 small yellow squash, thinly sliced
  • 3 small zucchini, thinly sliced
  • 1 large red bell pepper, cut into thin strips
  • 1/2 cup chopped green onions
  • 1 bottle Italian dressing
  • 1/8 teaspoon garlic powder

Instructions

  1. Combine sliced yellow squash, zucchini, chopped green onions, and red bell pepper strips in a bowl.
  2. Gently toss the vegetables to mix.
  3. Add garlic powder and pour Italian dressing over the vegetables.
  4. Refrigerate in a tightly covered container for at least 8 hours or up to 2 days.
  5. Stir occasionally during marination.
  6. Serve attractively in a lettuce-lined bowl.
