Ingredients

  • 2 pkg. frozen spinach
  • 4 Tbsp. butter
  • 2 Tbsp. flour
  • 2 Tbsp. chopped onion
  • 1/2 c. liquid from drained spinach
  • 1/2 c. evaporated milk
  • 1/2 tsp. black pepper
  • 3/4 tsp. celery salt
  • 3/4 tsp. garlic salt
  • 6 oz. roll jalapeno cheese
  • 1 tsp. Worcestershire sauce
  • red pepper to taste

Instructions

  1. Cook spinach according to package instructions, omitting salt. Melt butter in saucepan over low heat; add flour, stirring until blended and smooth but not brown.
  2. Add onion and cook until soft, but not brown.
  3. Add liquid (vegetable juice and milk), stirring slowly to avoid lumps.
  4. Cook until smooth and thick.
  5. Continue stirring.
  6. Add seasonings and cheese (which has been cut in small pieces).
  7. Stir until cheese melts.
  8. Combine with cooked, drained spinach.
  9. This may be served immediately or put into a casserole and topped with buttered bread crumbs.
  10. The flavor is improved if allowed to set overnight in refrigerator.
  11. This casserole can be frozen; bake in moderate oven until bread crumbs are browned and dish is bubbling hot.
