Instructions
- Cook spinach according to package instructions, omitting salt. Melt butter in saucepan over low heat; add flour, stirring until blended and smooth but not brown.
- Add onion and cook until soft, but not brown.
- Add liquid (vegetable juice and milk), stirring slowly to avoid lumps.
- Cook until smooth and thick.
- Continue stirring.
- Add seasonings and cheese (which has been cut in small pieces).
- Stir until cheese melts.
- Combine with cooked, drained spinach.
- This may be served immediately or put into a casserole and topped with buttered bread crumbs.
- The flavor is improved if allowed to set overnight in refrigerator.
- This casserole can be frozen; bake in moderate oven until bread crumbs are browned and dish is bubbling hot.
