Ingredients

  • 1 lb. cod or flounder fillets
  • 1 c. bread crumbs
  • 1/4 tsp. basil
  • 1/3 c. finely chopped onions
  • 1/3 c. chopped green pepper
  • 2 Tbsp. grated carrot
  • 1/4 c. safflower oil

Instructions

  1. Preheat the broiler to hot.
  2. Place the fish fillets in an oiled shallow pan in a single layer.
  3. In a small bowl, combine bread crumbs, basil, chopped onions, chopped green pepper, grated carrot, safflower oil, and vinegar.
  4. Spread the breadcrumb mixture evenly over the fish fillets.
  5. Broil the fish 6 inches from the heat until the fish flakes easily.
